No-vege salad anyone?

Hi all!

I thought I would share with you a fuss-free avocado & cherry tomatoes salad. It’s easy to whip up in the morning and it makes for a delicious breakfast to start the day.

Ingredients:

1. 1 ripe avocado

2. 4-5 cherry tomatoes

3. 1 small onion (optional)

4. Some parsley (optional)

5. Olive oil

6. Salt & pepper

Steps:

1. Dice the avocado, cherry tomatoes and onion.

2. Add some parsley leaves to the diced mixture.

3. Drizzle a small amount of olive oil over the mixture.

4. Add salt and pepper to taste.

And there you have it! An extremely quick, healthy and simple meal. Just remember, use a RIPE avocado. I made the mistake of using a semi-UNripe avocado since I could no longer resist the urge of making the salad. It was hard, let me tell you that. The avocado was so hard and crunchy that it hurts to bite into it. And honestly, the salad didn’t turn out all that good. Sooo, the moral of the story is to not be so greedy and wait for the avocado to ripen before doing anything else. Lol.
